Evaluation of phytochemicals and antioxidant activity of gamma irradiated quinoa (Chenopodium quinoa)

Abstract Phytochemical and antioxidant activity of quinoa flour was evaluated after subjected to gamma irradiation processes at dose 3 6 kGy. Both non-irradiated irradiated samples were successive extractions in ethanol solvent. The treatment investigated via Ferric reducing power (FRAP) radical-scavenging (RSA) using 2,2-diphenyl-1-picrylhydrazyl (DPPH).Total phenolic flavonoid content analyzed Folin–Ciocalteu micro-method, aluminium chloride (AlCl3) method High Performance Liquid Chromatography (HPLC). As well as, effect on saponin also evaluated. Irradiation showed slight differences the exposure process enhanced both total (TPC) Total (TFC), TPC 34.52 30.92 mg Gallic Acid Equivalent (GAE)/100g compared 26.25 GAE/100g quinoa. TFC 67.44 62.89 Quercetin Equivalents (QE)/100g 53.15 QE/100g. kGy significantly (p> 0.05) decreased IC50 as DPPH-RSA increased FRAP.
